RED Episode #129:  Esther Ekhart from Ekhart Yoga and a Flashback to Yak and Yeti at Animal Kingdom

In this week's PLUS-SIZED-EPISODE, in addition to our training updates, we are featuring an interview with the founder of Ekhart Yoga, Esther Ekhart.  Aimee has been a long-time member of Ekhart Yoga and Esther’s classes have been a major part of coming back from injury but more importantly, it has been a key cross-training element for Aimee’s running program.  The running playlist on YouTube was how Aimee initially found Ekhart Yoga, and since then she has subscribed and been a loyal member for several years.  

Of course, everyone should consult a doctor before adding anything to their fitness regime.

Esther and her fellow instructors offer modifications during yoga classes so you can do each pose at a level that works for you. The Ekhart Yoga website is searchable by the level of yoga expertise, teacher, the time you have available, the specific use you are looking for, and much more.

EAT

When we went to Walt Disney World a few weeks ago, we were going to celebrate our wedding anniversary.  So we are featuring an upscale meal we had while in the parks that did not disappoint.  

This week, we flashback to a meal we would have again and again at Yak and Yeti inside Animal Kingdom there.  The restaurant itself has an eclectic mix of artifacts meant to transport you to a hotel at the foot of the Himalayan mountains where travelers would stop on the way to Mount Everest.  The cuisine is a tasty mix of Asian dishes, and our appetizer of pan-seared dumplings with a soy-lime dipping sauce was mouth-watering and tangy with a rich pork filling. Dana’s entree of Honey Chicken was sweet yet crunchy with the tempura chicken and included jasmine rice to soak up all that awesome sauce.  Aimee had Korean Beef which combined barbecue flavors with tender beef, crunchy veggies, and jasmine rice.  So good! We can’t wait to go back and try the duck and the coconut shrimp dishes.  It was special-occasion-worthy!

DRINK

Yak and Yeti had an extensive list of cocktails, and we both found ones to enjoy.  Aimee tried a rum-based beverage developed by the bartenders there called the South Seas Traveler.  It tasted like a sweet vacation beverage!  Dana had the Snap Decision, which featured Woodford bourbon and apricot brandy.  It was one we would order again!  Two delightful drinks to top off our anniversary celebration!
