RED Episode 7 Safety Tips for Running at Night, Guiness Stew, and Upcoming Podcast Episodes

We are so happy to be getting back to a regular schedule, having power, and getting internet back after Irma!  We can't wait to get back to publishing upcoming episodes.

First, it is just a reminder to be safe if you are running late at night or early in the morning, and wear light colors.  Even better, purchase a light you can wear as you run to alert drivers on the road.  You can get one at any speciality running shop in town.

Second, it is an awesome recipe for dinner.  Check this Guinness Beef Stew recipe out from Cooking Light and My Recipes. The drink and the food in one shot this episode!  It is a great cold weather dish, so we turn up the AC in Florida and pretend it is winter!  Seriously, it is great comfort food that is done in a healthy way.

Quick Bite # 7: Fresh and Easy Guacamole at Home

Yes!  You can make guacamole at home in no time, and I am proof of that!  The avocados are looking good at farmer’s markets and grocery stores at this time of year, so why not use them in a healthy recipe like guacamole to put on delicious pork tacos, as a dip with a snack of carrots and celery, or as a topping for delicious nachos or a nice piece of skirt steak fresh off the grill.  

Here is the recipe from this episode:

Ingredients:

1 ripe avocado

1 tomato (plum or vine-ripened tomatoes are great)

1/4 medium red onion

1 jalapeño (you decide if you want extra heat by leaving the seeds and membranes in or removing them)

1/2 lime 

1/4 cup cilantro

1 teaspoon adobo seasoning (not the sauce that comes from the chipotle in adobo sauce, although that might add a smoky twist to the recipe, so if you try it, let me know!)

Preparation: 

  1. Chop all the veggies to relatively the same size and slice the lime.
  2. Chop the cilantro.
  3. Chop the cilantro.
  4. In a large bowl, add the avocado and mash it with a fork to desired consistency.
  5. Squeeze the lime into the bowl and stir it into the avocado.
  6. Add the chopped veggies to the bowl and stir to combine.
  7. Add the adobo of your choice and season to taste.
  8. Stir well.
  9. Taste.  Finish with an extra squeeze of lime and any extra adobo seasoning you like.
  10. ENJOY!
